Mushrooms...

...on toast, in a baguette, in a sandwich.  You know how you get into a habit with things?  ketchup was my go-to sauce for mushrooms.  HP (brown/fruit) sauce on the other hand, takes it to a whole new level.

I quite often go for a mushroom sandwich, if eating out for breakfast, but beware the butter/margarine

Mushrooms are a weekend treat for me :o) here I am, sat on my front door step, in the sunshine (note, jeans rolled up for maximum vitamin D absorption) with a cup of coffee.  

Porridge!

If ever proof was needed that being vegan doesn't need to be expensive and fancy, this is it. Porridge is as simple as it gets - wholesome, easy and affordable.  Personally, I aim to buy organic food, but I'm sure you know, porridge comes from all sorts of suppliers, in all sorts of packets.

Make it with water, soya milk, rice milk, nut milk... (Almond milk gives it a particularly nice flavour).

When I'm feeling naughty, I have a heap of sugar on top.  Otherwise, a sprinkling of cinnamon (and all its glorious anti-oxidants) is another nice way to serve it.

An occasional treat... a cooked breakfast from Fortify Cafe, a vegetarian and vegan cafe in Maidstone, Kent.

Easily re-created at home, I often add in a couple of hash browns, just to boost the calorie content ;o)

Vegan Friendly Croissants

I have a bit of a dilemma with these... when I first became vegan, croissants and cappuccinos were the two things I thought I was going to miss the most... then I found Jus-rol croissants!

The dilemma I have is that these croissants are pretty artificial.  I actually found it amusing at first that they were so 'rubbish' that they didn't contain any butter or eggs.

Anyway, if your conscience can handle the chemicals, then tuck in an enjoy! As you roll these up yourself, you could even put a blob of vegan chocolate spread inside.

Pancakes with maple syrup


This is a very much 'American' breakfast, but that doesn't stop it being delicious!  sooooo easy to make at home, or in a campervan.

The recipe comes from an App, called Vegan Yum Yum, which I have adapted a little (here is my version):

1 1/2 cups rice milk (preferably vanilla rice milk)
1 tbs sugar
2 tbs oil
1 1/3 cup all purpose plain flour
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract - IF NOT using vanilla rice milk
1-2 tbs water to thin the batter, if necessary

- Mix everything together - I like to start with the flour, adding a little liquid at a time.  You could make this batter using a blender, and if you are, put the liquid in first, then add all the dry ingredients.

- You can make the batter the night before, but be sure to stir it up thoroughly before you use it.

- Heat a non-stick pan over a medium heat for a few minutes.  Do not grease the pan.  Pour the batter directly into the centre of the pan.

- After a few minutes of cooking, bubbles form, and set on the uncooked side of the pancake (see my photos).  The batter will start to set, which is when you should flip over the pancake.

- Stack the pancakes as you go - this will help to keep the whole stack warm.  Put them in the oven while you are cooking more, if you can/like.  Pour maple syrup all over before serving.

- Top tip:  if you want an impressive stack of pancakes, they need to be the same size, which is quite hard to judge (I did get the hang of it eventually - i had to eat all the odd sized ones while I was cooking... shame...) so its easy if you use a ladle, or perhaps one of the cup measuring scoops.

Breakfast on the go!

I travel quite a lot for work, and find myself in Central London train stations, far too early in the morning - definitely too early to have breakfast before I leave.  

I find 'take-away' breakfast one of the hardest things to find, suitable for vegans... plenty of croissants, and things full of eggs and cheese, but nothing else.

I now take with me a portion of cereal (I LOVE Dorset Cereals muesli) with me, in a plastic pot... I use one I saved from an Innocent Veg Pot... it's great to re-use!   I also take a small carton of Rice Milk with me - you can get Rice Milk in a packet of 3 x 200ml cartons.  It's not the cheapest way to buy it (I think around £1.70 for 3 cartons) but when you consider you can waste a couple of pounds on absolute rubbish for breakfast, this way, for my muesli and rice milk, I get a filling, tasty and healthy breakfast for less than £1.
